Although Tex-Mex is king in Texas, I was in Arizona recently and discovered the delicious differences between their cuisine and ours. One that jumps out at me is the use of corn and black beans vs. corn and pinto beans (more typically used in Texas).
BookSumo provides some great cookbooks, and I was eager to try this one out. This book provides nutritional information but not photos of the completed dishes. The recipes were generally heavy in sodium. The MEXICAN MUSHROOM CHILI is missing an ingredient. The instructions tell the cook to add "6 cups of the water" (implying there is more water to be used elsewhere).
