Excellent book! A fascinating look at the science, anthropology, and contemporary culture and communities surrounding the various way we cook food. The writing is engaging, relatable, and understandable and it made me really excited about food (real food, not the edible food-like substances sold in most stores and restaurants) and the processes of cooking.

Highly recommended.

He goes back and forth between the scientific (chemical reactions when cooking) and mystical (fire, water, air and earth corresponding to BBQing, stewing, baking bread and fermentation). He sounds a little like John McPhee at times, with his adulating mini-bios of various cooks. I don't think he really likes the barbequing culture, though.
