A classic. About half this book covers the science and politics behind this traditional form of vegetarianism, the other half contains recipes. And the recipes are excellent, even if you 'cheat' and omit the milk powder used to up the protein. The carrot cake recipe is the best ever.

This is the original book on proteins. What I especially found useful was learning what foods to put together to make delicious protein-rich meals without heavy use of meats.
