My last thread wandered around but I thought cooking goat was a bit too far off from the topic of salad greens to continue there.  I had some really good goat stew last week.  I have tried 3 times to cook goat and it has been tough and stringy each time.  No other meat causes me such difficulty -even game-  I cook it forever and it's still tough.  We can get goat at the farmer's market and I'd like to try it again. I have done this once a summer for the past 3 years...and failed.   Does anyone have any good tips -like what cut, how long to cook it, what temps to cook at?  I've tried a few web recipes and can't get them to work.

I've never done goat but I live in a very Mexican area where it is a traditional Christmas dish, it is usually stewed. With tough beef the key is to cook it forever, I would imagine goat is similar. I'll have to give a friend a call later and see how she does it (It's 4 am right now).

No baahh dy  cooks goat?  maahhh well, I'm going thursday to the farmers market.  I don't know if I'm going to try again with the goat yet or not.

Did you know thhat goat is the moat widely eaten meat across the globe?!  There's an entire cookbook dedicated to GOAT called Goat by Bruce Weinstein 9781584799054 published in 2011.  It includes goat meat, milk and cheese recipes.  It's a really nice book with some great photos and for many of the meat recipes it talks about the best cuts to get - lots of gteat stories as wellt.  I got the book right here on PBS but have yet to try any of the meat recipes.  Check it out!

I've had goat on various caribb. islands, and did not care for it---although some was better than others. Goats are hardier and easier to raise, hence grown more in poorer countries.

Everybody said it has to be cooked a really long time, hours and hours, preferably in a stew with lots of spices/heat.

The taste is also affected by how it was raised, whether it was confined and fed "special" goat food, or whether it ran wild and just ate what it found. The wilder it ate, the gamier the meat, supposedly. And the more it runs around, the tougher it will be.
