Juice the lemon, crush the garlic and place all ingredients in a food processor. Process on high for 1-2 minutes. Serve with crackers or pita chips.
For a variation, use a can of prepared black beans. Strain (but don't rinse) the beans, and use half the lemon juice (since black beans are wetter than garbanzo beans.)
