My favorite is mushroom barley pilaf. The book has easy Mediterranean recipes without using meat, dairy or tofu. I have a dairy allergy so I find the book wonderful. I don't find the ingredients hard to find. The book calls for fresh fruits and vegetables and common ingredients.
The Mediterranean Vegan Kitchen served to confirm and enhance my idea of, well, Mediterranean vegan cooking. I learned more about how to use vegetables in a more creative way than I previously knew, and I am going to keep it for awhile as I hone my vegan skills. All in all, very helpful and easy.
