Good recipes, I don't use most of these during the week because many are time consuming!

This is *the* book I give people who ask for advice about introducing more meatless meals into their routines. Delicious, well-tested recipes, easy-to-find ingredients (mostly available at any regular grocery store), and nothing too complicated to make.
It's also the book that showed me just how easy it was to be a vegetarian. Back in college my 12 housemates and cooked communal suppers 5 nights a week and this was our favorite cookbook, even though most of the group were meateaters!
Includes both vegan and ovo-lacto vegetarian recipes, and also has one section with (non-veg) seafood recipes near the back. There are lots of very helpful lists of which recipes are vegan, dairy-free, good for kids...etc, nutrition info for each recipe, and suggestions for what to serve with each recipe.

Great recipes - esp. the banana muffins.
