Has anyone tried any of the veggie shredders or spiralizers you see advertised that make long shreds of zucchini, yellow squash, carrots, or cucumbers that can be used to take the place of pasta in recipes? I would like to try one but would like some feedback as to how successful they are and ease of use. |

when I was much younger there was a recipe that circulated around among us that was a straight transfer of sliced egg plant for lasangne noodles in lasangne. Everything else was the same just egg plant instead of noodles. |

Charles, I still do this with sliced eggplant in place of lasagna noodles for my husband who is a type II diabetic. I also have used a combination of eggplant, zucchini, and yellow squash as well. He loves it and still gets the taste of lasagna with the tomato sauce, ricotta, and mozzarella. |

I knew an old woman once who I did little favors for. Like turn a small garden spot in her back yard. or other little things she needed from time to time. She made a fantastic yellow squash casserole that I loved. I think it was a very simple dish but I liked it a lot. One of my favorite things is salmon croquettes. I was lamenting the fact that I liked them but didn't know how to make them when a lady I knew told me they were very simple to make. She told me to look on a salmon can and sure enough there was a recipe there and I have made salmon croquettes ever since. ps. I like cottage cheese instead of mozzarella in lasagna. |

I've tried the spiralizer on cucumbers, zucchini, yellow squash. It's fun for the first 5 minutes, the thin spirals cook amazingly fast so a very light quick steam is all you need. I had tried unsucessfully to spiralize a sweet potato - too hard of a vegetable. haven't tried carrots. If you have any kind of wrist problem, it can be an unpleasant chore. I bought a really cheap hand held one and agree with Liz. BUT: We loved the veggies this way so I am looking for a better one to invest in for next summer. Loved the product. The little hand held is just not easy, big, or fast enough for our use. We would use it practically every night for at least a couple of months if we had a better one. Pamela |

amazon has a big selection of them in many price ranges. some have hand cranks on them. |

We have one and I love it for zuchinni. I saute it with some olive oil, seasonings, and throw in left over chicken. Yummy |

We shop a lot in thrift stores.I got one of the hand ones first and was not able to get it to work. I then found one called a Vegetti still new in the box. We love it and make zoodles from zucchinni all the time. I see the same one very often in the thrift stores often still in the box it came in. |
