Dice -chunky one large or two medium zucchini 

Dice one sweet onion

One stick of butter

Basil or herb mix

Cornbread stuffing

salt-pepper

2 beaten eggs (can add boiled eggs on top for decoration)

1/3 cup milk added to eggs

One stick of butter in a pot, add onion and zucchini to cook and soften - about 10-15  minutes

add salt and pepper after vegetables are fork softened

add basil and/or herb mix...1-2T

add Cornbread stuffing mix slow enough to absorb butter and stir until well blended

add egg/milk mixture

Pour into 9-10 baking dish - cook 375 for 1 hour
