A great book for accidental, beginning, or curious bakers that one can go back to for reference, self-reflection, or technique. Some recipes may have been superseded, for example the sourdough bread recipe which Chad Robertson has greatly, deliciously simplified, yet there is this timelessness in Peter Reinhart's teachings and Ron Manville's photography that render _The Bread Baker's Apprentice.._ a keeper.
